Curried Chicken in Noodle Ring
This dish is delicious and exotic enough for company but it is easily made from leftover chicken or turkey.
For 4 servings you will need:
Noodle Ring (recipe follows)
1 cup finely diced celery
1 cup leftover chicken or turkey gravy or use canned or prepared packaged gravy
2 Tbsp. cornstarch
1 Tbsp. water
2 cups cooked chicken or turkey. cut into ½ inch dice
1 to 2 tsp. curry powder
Black pepper and onion salt
Noodle Ring: Cook 2 cups wide noodles in boiling salted water until tender. Drain. Stir in 1 Tbsp. butter or margarine, 1/4 cup each chopped roasted peanuts and raisins, and 1/4 cup minced parsley. Pack into greased 1-quart ring mold.
Tips: It ring mold is unavailable, serve chicken on prepared noodle mixture.
Prepare Noodle Ring. Put into low heated oven to keep warm. Cook celery in small amount of boiling salted water until tender-crisp. Drain, reserving liqud. Add enough water to liquid to make 1 cup.
In saucepan, mix together liquid and gravy. Blend cornstarch with 1 Tbsp. water. Stir into mixture. Cook, stirring, until thickened. Add chicken and seasonings to taste. Heat through.
Unmold Noodle Ring onto hot platter Fill center with chicken mixture. Serve remainder on the side.
Good served with: Cranberry sauce or chutney.
